Here is the recipe adapted from Blue Banana Muffins in How it All Vegan
3 1/2 cups flour
1 cup pumpkin
2 bananas mashed
2 tsp baking powder
2 tsp cinnamon
1 tsp ginger
pinch of allspice
1/2 cup of sugar (I would use a bit less next time)
1/2 cup of oil
2 cups of soy milk
1/2 cup of blueberries
Optional
Flax seeds, wheat germ, pumpkin seeds or other seeds
Preheat oven to 350. Mix up ingredients pour into greased baking cups and cook for about 35-40 minutes. Enjoy!
