Our Vegan Thanksgiving Potluck

On Friday we were lucky enough to be able to share a vegan Thanksgiving potluck with friends, old and new in our home. It was really beautiful. And the food! Oh the food. So much amazing vegan food. Tofu loaf, lasagna, veggies galore! Pies, Pies Pies! This needs to happen more than once a year because it was truly a day to be thankful for!

Sweet Vegan MoFo Part 2 - Pumpkin Banana Blueberry Muffins

As I was baking on Tuesday night I figured I might as well make some muffins for the house and use up some more of the great pumpkin. So I made these Pumpkin Banana Blueberry Muffins!


Here is the recipe adapted from Blue Banana Muffins in How it All Vegan

3 1/2 cups flour
1 cup pumpkin
2 bananas mashed
2 tsp baking powder
2 tsp cinnamon
1 tsp ginger
pinch of allspice
1/2 cup of sugar (I would use a bit less next time)
1/2 cup of oil
2 cups of soy milk
1/2 cup of blueberries
Optional
Flax seeds, wheat germ, pumpkin seeds or other seeds

Preheat oven to 350. Mix up ingredients pour into greased baking cups and cook for about 35-40 minutes. Enjoy!

Sweet Vegan MoFo

Work has been incredibly busy which is why my blog hasn't received any attention lately. Then yesterday my husband says I need cookies for the company Thanksgiving party tomorrow.  As I am up to my neck in work, housework and just being a momma. But hey no problem.  I put the little bean to bed, hit the tread mill for a bit, cleaned up and went into the kitchen to do some late night baking.

Those that have been following may remember I cooked up our pumpkin last week and I have been cooking with it ever since so of course I made the Sell Your Soul Pumpkin Cookies from Vegan Cookies Invade Your Cookie Jar.
First let me say I love this cookbook in fact Isa has yet to make a cookbook I don't like.

The cookies came out fantastic I reduced the pumpkin ahead of time to save some time when I needed to do my baking last night. They are moist and soft and yummy and perfect for a autumn or any time really.

I also baked some Pumpkin Banana Blueberry Muffins but I will tell you about those tomorrow. Have a sweet day.
